King’s Favourite, Kimchi Tteok-galbi
Kimchi Tteok-galbi is a mouthwatering Korean dish in Korean royal court cuisine: it is made from marinated minced beef ribs, kimchi, Korean rice–cakes, and assorted vegetables, then it is grilled to serve.
One Korean story says the dish was born as it was not befitting for kings to gnaw on Galbi (grilled short ribs). In modern South Korea, Tteok-galbi is also made with ingredients mixed with or other than beef, such as Kimchi, pork or duck.
Our version of Tteok-galbi, Kimchi Tteok-galbi, is a tad sweet, chewy, and juicy, and best of all, it’s very tender because the meat is already chopped into small pieces and softened.
You will love the texture. It is chewy yet soft, and so flavorful! Ground beef won’t give you the same taste as hand processed short rib meats.
